How?
We are building a network of committed winemakers.
All are certified organic, adhere to strict specifications and apply no synthetic pesticides, insecticides or weedkillers to their vines.
The grapes are systematically harvested by hand to enhance quality and create a social bond - the festivities created by the harvesting season are no legend.
After systematic maceration for reds and oranges, and occasional maceration for whites, the grapes are pressed.
The juice is simply put into tanks, foudres or barrels.
We're only here to accompany them through the long process to the bottle in your hands.
A good winemaker works in the vineyard rather than rectifying his product in the cellar.
Our juices do not undergo traumatic manipulations: no filtration, centrifugation or other technology designed to modify the juice.
No Pépin wine undergoes any input before or during fermentation.
We don't add sulfur, industrial yeasts, tannins, ammonium sulfate, tartaric or ascorbic acid, carbon, gum arabic, potassium ferrocyanide, PVPP... The beautiful raw material we select, love and pamper doesn't need them.
Only homeopathic doses of SO2 protection can be decided before bottling.
We simply accompany the wine in its evolution, like a guide, with a great deal of know-how, patience and tolerance.
Rather than orchestral conductors, we are humble musicians participating in this free symphony.
From these beautiful grapes and this natural vinification come living wines.
Like children whom we guide in their evolution, without imposing our choices on them, they give us the best they have to offer.
Their artistic side is revealed and thrills you, while at the same time imposing a few constraints on us.
For example, we have no control over vinification time, which means that some wines are ready in six months and others in two years or more.
Even if we know where we're going in broad terms, depending on grape varieties and terroirs, the wines follow one another but are not alike.
They're all individuals, with different tastes.
So how can we guarantee that our wines will always be the same?
We don't.
Our wines evolves.
What we can guarantee is that if you liked the first one, you'll like the second, the third ... a bit like the music of your favorite artist.
Our naturally produced wines even tend to have a slight effervescence when opened.
Just like a little reduction, the gas that proves that the wine is still working, still living in the bottle, provides protection, a natural preservative.
You'll also find a difference in taste depending on the lunar calendar, fruit, flower, leaf or root days.
Some people are uncomfortable with the idea of buying something that won't taste the same every time it's opened.
Conversely, we are no longer comfortable consuming products that are the same, with no surprises, disguised to fit a sterile standard.
The best garden tomatoes don't taste the same from year to year or from garden to garden.
We're more inclined to say that if a fruit tastes the same from year to year, you shouldn't eat it.
Now, how can we guarantee the delivery of this wine without interruption, when nature imposes onto us its uneven harvests and variable vinification times in the cellar?
We are a group.
We select, federate and support a wide range of producers under the Pépin banner.
These are committed artisans who care about the land they work and the life that inhabits it.
Once the parcels, grapes and juices have been selected, the Pépin team, with its decades of expertise in natural winemaking, accompanies them.
When the wines are ready and taste good, they are blended according to qualitative needs or taste, then bottled.
Because there are so many of us, there's always a producer whose white or red wine is ready.
The big family we form means we can naturally supply you with good wine all year round.
