Blending: directly on the plot, combined with plant material separation.
Work: 10-day maceration in floating-cap vats after foot treading, wetting after pressing. Addition of Hahnenberg Riesling juice for bottle foaming.

Time: Fermentation lasts a week, with foaming in the bottle lasting around 10 days.
Tasting
Visual: faint red with violet nuances. obvious cloudiness due to lack of filtration.
Nose: very spicy notes (clove, cinnamon, pepper), quetsches, distillation.
Taste: light effervescence, great volume, good tension. spices and very pronounced notes of quetsche. substantial but well-integrated tannins.
Food & wine pairing: A surprising asset as an aperitif, this wine will also go well with tajines or desserts based on sweet spices (cinnamon/vanilla) and/or plums/quetsches. Open
chilled and over the sink.
Aging: like a beer, drink within 2 years.
